演講摘要 Eutherian milk or colostrum usually contains lactose (Gal(β1-4)Glc) as the predominant carbohydrate as well as lower amounts of a variety of oligosaccharides, most of which contain a lactose unit at their reducing ends. In the milk of monotremes and marsupials, however, milk oligosaccharides predominate over lactose. In human milk, oligosaccharides act as receptor analog that inhibit the attachment of pathogenic microorganisms to the colonic mucosa, as prebiotics, and as immune modulators as well as stimulators of nerve development. Among euthrians, the milks of many species of the order carnivora are exceptional in that they contain substantial amounts of oligosaccharides to lactose; in some texa, such as bears and raccoon, the concentration of oligosaccharides greatly exceeds that of lactose. We have studied the chemical structures of milk oligosaccharides among many species of carnivora including dog, striped skunk, mink, raccoon, some species of bears, some species of seals, spotted hyena, African lion, clouded leopard, etc. In this talk, these structures are compared among the species and discuss the physiological reason why oligosaccharides predominate over lactose in some species of carnivora.-Dr. Tadasu Urashima

演講摘要 Several lactic acid bacteria are capable of producing viscous exopolysaccharides to protect themselves from environmental physicochemical and biological stresses, such as osmotic stress, toxic compounds, attack by phage, and so on. In the dairy industries, exopolysaccharides of lactic acid bacteria are advantageous in fermentation of dairy products, especially fermented milks, because presence of such exopolysaccharides improve mouthfeel of the dairy products and protect syneresis. Moreover, a couple of biological activities, including immune-modulating, lowering cholesterol, anti-tumor, anti-oxidation, etc., are expected on some exopolysaccharides of lactic acid bacteria, owing to a wide variety of their chemical structures. Lactobacillus fermentum MTCC 25067 (formerly TDS030603), isolated from an Indian fermented milk, dahi, has been studied in my laboratory. This strain secretes an exopolysaccharide in a relatively good amount into culture medium, making the medium highly viscous. In this lecture, general aspects of exopolysaccharides of lactic acid bacteria are introduced and besides structure-rheology relationship of the exopolysaccharide produced by the strain MTCC 25067 will be discussed.-Dr. Kenji Fukuda
